When proving conservation of energy how did we turn $\nabla U\cdot \dot{\vec{r}}$ into $-\vec{F}\cdot \dot{\vec{r}}$?

This was for the assumption of a conservative force. If $\vec{F}$ is conservative, it's possible to associate the force with a potential energy $U$ according to $F=-\nabla U$.
